Peaches, Peaches, Peaches....and Happy 4th of July!

Hope everyone is having a wonderful 4th of July holiday. I decided to bake peach pie today - how American is that? I picked peaches- a lot of them - from my peach tree this morning and baked pies all day today.

Pies! Yummy!!!! Nothing like a home made pie made from scratch with peaches grown in your own backyard.

Fast Complete and a Healthy Fried Rice recipe

Well I made it 4.75 days on my juice fast. I released 8 pounds and I felt great after the fast was done. I decided that trying to fast through the 4th of July probably wasn't the best idea. LOL! So, yesterday afternoon I broke my fast. Last night I made the best Healthy Fried Rice (recipe below) and even my husband loved it. It was interesting not eating solid food - really made me think about how food obsessed we are. It seemed that every commercial on television was about some sort of food that was unhealthy. Here is the Healthy Fried Rice recipe.

Health Fried Rice
6 oz. of Tofu (firm or extra firm) or you could use chicken (cut into 1/4 inch squares)
1/2 cup shredded or finely chopped carrots
3 cups chopped broccoli (a head)
4 scallions chopped
3 cloves of garlic (or more if you like)
1 T. minced ginger
1 cup beansprouts
2 eggs
2 T. Sesame Oil
1/2 t. red pepper flakes
2 T. Fish Sauce
3 T. Soy Sauce
1 cup uncooked brown rice

Cook the brown rice per the instructions on the package. I always use a rice cooker - I find the rice comes out better cooked that way. Marinate Tofu in 2 T. Soy Sauce and  red pepper flakes. Saute garlic, ginger in 2 T. Seseame Oil for a minute, then add in tofu cooking for about two more minutes, then add in scallions, carrots, broccoli, and bean sprouts. Stir fry for about 5 minutes until vegetables are cooked. Take mixture out of the pan, and add two eggs to the pan and stir fry until cooked. Then add in cooked rice, 1 T. Sesame Oil, Fish Sauce and remaining soy sauce, and the Tofu vegetable mixture. Stir all together and serve! Super yummy!!!
